MMMmmm…..green chilies! Sometimes we get tired of other stuff so we make a crockpot full of green chile chicken soup — it’s so simple and easy and goood!!!
You need these things:

Cook the rice. Don’t add it raw. I learned that lesson and you get the gift of my wisdom. Or if you have any previously cooked rice from take-out yesterday or whatever, use that.
AND ADD CHICKEN — we usually use the H-E-B Meal Simple Chipotle Lime Chicken breasts because they’re fast and easy — which is the point of this meal, but if you’re not in Texas, just season some chicken with garlic and lime. Cook it however you want to — or use leftovers if you have any. Anyway, you need chicken.

Dice that protein — doesn’t have to be pretty. Just smaller than bite-sized. Use a can opener and get all the ingredients from these two pictures into a crock pot. You don’t have to drain anything — they’ll all get acquainted real well in that crock.
Add some garlic, cilantro, and lime juice. Measure to taste. You might need salt, but take it slow because there’s salt in all the ingredients and you can always add more.

You don’t have to use fresh cilantro — you can add dried spice. Same with the garlic, i guess. And you can use fresh squeezed lime juice if you’re feeling bougie…

Toss everything is that time-saving, life-saving, household appliance found in every family kitchen for decades and set it on low.
Do it in the morning and go to work or the park or the zoo or the wineries or the spa — wherever, and it’ll be ready to serve over avocadoes and top with shredded cheese when you get home. Or make it on a day off and eat it as soon as its hot. Spice it up with jalapenos if you’re feeling feisty!
